  • Preheat your oven to 450°F.
  • Place a sheet of parchment paper on a baking sheet.
  • Crack the eggs and separate the whites from the yolks. Put the whites in a big bowl and the yolks in a small one.
  • Add salt to the egg whites.
  • Use an electric mixer on high speed to beat the egg whites until they form stiff peaks.
  • Carefully mix in the cheese, chives, thyme, and pepper with a spoon.
  • Spoon the mixture into four piles on the prepared baking sheet, shaping them into circles. Use the back of the spoon to make a dent in the middle of each circle.
  • Bake in the preheated oven for 3 minutes.
  • Take the pan out of the oven but keep the oven on.
  • Gently slide one egg yolk into the dent of each circle.
  • Put the pan back in the oven and bake until the yolks are just set but still runny, for about 3 to 5 minutes.
  • Sprinkle some more black pepper on top.
  • Serve the dish while it's warm.
