Cloud Eggs with Cheese and Herb
Ingredients
- 4 large eggs
- pinch salt
- 4 tablespoon grated Pecorino Romano cheese
- 1½ teaspoon fresh chives chopped
- 1 teaspoon fresh thyme chopped
- ¼ teaspoon fresh ground black pepper plus more for garnish
Instructions
- Preheat your oven to 450°F.
- Place a sheet of parchment paper on a baking sheet.
- Crack the eggs and separate the whites from the yolks. Put the whites in a big bowl and the yolks in a small one.
- Add salt to the egg whites.
- Use an electric mixer on high speed to beat the egg whites until they form stiff peaks.
- Carefully mix in the cheese, chives, thyme, and pepper with a spoon.
- Spoon the mixture into four piles on the prepared baking sheet, shaping them into circles. Use the back of the spoon to make a dent in the middle of each circle.
- Bake in the preheated oven for 3 minutes.
- Take the pan out of the oven but keep the oven on.
- Gently slide one egg yolk into the dent of each circle.
- Put the pan back in the oven and bake until the yolks are just set but still runny, for about 3 to 5 minutes.
- Sprinkle some more black pepper on top.
- Serve the dish while it's warm.
