Tips and Tricks
Mixing Dry Ingredients
Ensure the baking powder, salt, sugar, and flour are well mixed to avoid any clumps. Sifting these ingredients together can help achieve a smoother batter.
Preparing Wet Ingredients
Mash the bananas thoroughly to avoid lumps in the batter. Mixing the milk, egg, vegetable oil, and mashed bananas well ensures a consistent texture.
Combining Wet and Dry Ingredients
When adding the dry mixture to the wet mixture, stir until just combined. Overmixing can make the pancakes tough. It’s okay if the batter is a bit lumpy.
Cooking Pancakes
Make sure the griddle or frying pan is properly preheated to medium/high heat before adding the batter. A good way to test is by sprinkling a few drops of water on the surface; if they sizzle and evaporate quickly, the pan is ready.
Pouring the Batter
Use a ¼ cup measuring cup to pour the batter onto the griddle. This helps ensure uniform-sized pancakes and even cooking.
Flipping Pancakes
Flip the pancakes when bubbles start to form on the surface and the edges look set. This typically takes about 2-3 minutes. Cook the other side until golden brown, usually another 1-2 minutes.
Serving Suggestions
Serve the pancakes warm with a variety of toppings such as maple syrup, fresh berries, sliced bananas, or a dollop of whipped cream. A sprinkle of nuts can also add a nice crunch.
Storing Leftovers
Store any leftover pancakes in an airtight container in the refrigerator for up to two days. Reheat in the microwave or a toaster oven until warmed through.
Freezing
For longer storage, freeze the pancakes. Place them on a baking sheet in a single layer to freeze, then transfer to a freezer-safe bag. They can be frozen for up to three months. Reheat in a toaster or microwave straight from the freezer.
Customizing the Recipe
Feel free to customize the batter by adding a teaspoon of vanilla extract or a pinch of cinnamon for extra flavor. You can also fold in chocolate chips, nuts, or blueberries before cooking for a fun twist.
