- ¾ tsp chili powder
- ¾ tsp ground coriander
- ¼ tsp salt
- 3 (¼ lb each) haddock or cod fillets
- 2 cups green cabbage thinly sliced
- 2 scallions thinly sliced
- ½ cup red onion finely chopped
- ⅓ cup fresh cilantro coarsely chopped
- 8 (6 inch) corn tortillas warmed
- 1 avocado peeled and cut in 8 wedges (optional)
- ½ fresh lime, juiced (for optional avocados)
- Salt and Black Pepper to taste (optional)
Instructions
- Prepare a 7×11-inch baking dish by spraying it with nonstick spray.
- In a cup, combine lime juice, oil, chili powder, ground coriander, and salt. Stir the mixture well.
- Place the fish in the baking dish, making sure it's in a single layer. Use a brush to coat the fish with the lime juice mixture.
- Cover the dish with plastic wrap, leaving one corner open for venting. Microwave the fish on High for about 3 minutes, or until it's just opaque in the center.
- Use a fork to break the fish into small flakes.
- In a medium bowl, mix together the cabbage, scallion, onion, and cilantro.
