Ingredients
 

  • 2 medium corn tortillas
  • 6 tablespoon gluten free-fat free salsa divided
  • 2 ounces cooked chicken breast
  • 2 tablespoon shredded reduced-fat, gluten-free Mexican cheese
  • 1 scallions chopped
  • 1 tablespoon jalapeno peppers chopped
  • 1 cup mixed greens
  • ½ cup bell pepper chopped
  • ¼ cup radish chopped
  • 1 teaspoon olive oil
  • fresh lime juice to taste
  • salt to taste
  • ground black pepper to taste

Instructions
 

  • Spread 2 tablespoons of salsa evenly over one tortilla.
  • Sprinkle the chicken, cheese, scallion, and jalapeno over the salsa-covered tortilla.
  • Place a second tortilla on top to cover the fillings.
  • Cook the tortilla stack in a skillet or oven until everything is heated through.
  • In a large mixing bowl, combine the greens, peppers, radishes, oil, and lime juice.
  • Season the salad mixture with salt and pepper to taste.
  • Cut the cooked quesadilla into 4 equal wedges.
  • Serve the quesadilla wedges with the remaining ¼ cup of salsa.
