Ingredients
- 2 medium corn tortillas
- 6 tablespoon gluten free-fat free salsa divided
- 2 ounces cooked chicken breast
- 2 tablespoon shredded reduced-fat, gluten-free Mexican cheese
- 1 scallions chopped
- 1 tablespoon jalapeno peppers chopped
- 1 cup mixed greens
- ½ cup bell pepper chopped
- ¼ cup radish chopped
- 1 teaspoon olive oil
- fresh lime juice to taste
- salt to taste
- ground black pepper to taste
Instructions
- Spread 2 tablespoons of salsa evenly over one tortilla.
- Sprinkle the chicken, cheese, scallion, and jalapeno over the salsa-covered tortilla.
- Place a second tortilla on top to cover the fillings.
- Cook the tortilla stack in a skillet or oven until everything is heated through.
