Quick Weight Watchers Chicken and Cheese Quesadilla

Ingredients
- 2 medium flour tortillas
- ¼ cup reduced-fat Mexican cheese blend shredded
- ¼ cup red onion thinly sliced
- 2 tsp jalapeno peppers minced
- 6 medium grape tomatoes halved
- ⅓ cup yellow bell pepper thinly sliced
- ⅓ cup cooked chicken breast shredded
- 3 sprays nonstick cooking spray
- ¼ cup fat-free salsa
Instructions
- Prepare a skillet by coating with non-stick cooking spray.
- Place a torttilla on a flat surface.
- Sprinkle Mexican cheese blend on the tortilla.
- Add vegetables, then chicken, then top with another tortilla.
- Place prepared skillet over medium/high heat.
- Place quesadilla in skillet, and cook approximately 3 to 4 minutes or until heated through and cheese has melted, flilpping halfway through cooking.
- Using a pizza cutter, cut quesadilla into 4 wedges.
- Serve with salsa.
