It’s perfect for a quick and flavorful weeknight dinner or as an appetizer for any gathering.
The recipe calls for canned chicken that is drained well, salsa, shredded fat-free cheddar cheese, and dry taco seasoning mix. When these ingredients are combined, it creates a flavorful filling that will be rolled into corn tortillas.
It’s crucial to use corn tortillas for this recipe as they have fewer calories and less fat than flour tortillas. If you can’t find small tortillas, simply trim down larger ones using a knife.
When you have your filling and tortillas prepared, assemble the taquitos by spreading a spoonful of the mixture onto each tortilla, roll it up tightly, and put it on a baking sheet with the seam-side down. Repeat with the remaining filling and tortillas, and bake until golden and crispy.
For extra flavor, you may serve the taquitos with enchilada sauce, salsa, guacamole, or sour cream. Alternatively, enjoy them as they are.

Weight Watchers Chicken and Cheese Taquitos

Ingredients
- 1 can (10 oz) fat-free white meat chicken packed in water drained well
- ½ cup salsa
- 1 cup fat-free cheddar cheese shredded
- ¼ tsp dry taco seasoning mix
- 8 (6 inch each) corn tortilla
- enchilada sauce (optional)
- salsa (optional)
- sour cream (optional)
Instructions
- Place chicken and salsa in a medium bowl. Mix well. Place in refrigerator, covered for approx. 15 minutes.
- Preheat the oven to 375° F
- Spray a baking sheet with Pam nonstick spray. Set aside.
- Take chicken out of the refrigerator, and drain any liquid. Mix in taco seasoning and cheese. Set aside.
- Microwave tortillas between 2 dampened paper towels for approx 1 minute, or until they are warm.
- One at a time, remove a tortilla from between the paper towels, lightly spray both sides of tortilla with cooking spray, place on clean surface. Spread approx two heaping tablespoons of chicken over the whole tortilla. Tightly roll and use a toothpick to secure. Put tortilla on the baking sheet seam side down. Repeat for each tortilla.
- Place in preheated oven, and bake for approx 15 minutes, or until crisp. Cool for approx 5 minutes before serving.
- Can be served with sour cream, salsa, and/or enchilada sauce.
