Tips and Tricks
Flour
Use a spoon to fill the measuring cup with flour, then level it off with a knife. This ensures you don’t use too much flour, which can make the scones dense.
Sugar
Use granulated sugar for the dough and coarse sugar for sprinkling on top. Coarse sugar adds a nice crunch and visual appeal.
Butter
Keep the butter very cold. You can even freeze it and grate it into the flour mixture. This helps create a flaky texture in the scones.
Yogurt
Use full-fat yogurt if you prefer a richer flavor and texture. The fat content helps keep the scones moist.
Dried Peaches
Chop the dried peaches finely to ensure they distribute evenly throughout the dough. You can also substitute with other dried fruits like apricots or cranberries.
Mixing
Mix the dough just until combined. Over-mixing can lead to tough scones. The dough should be slightly sticky but manageable.
Kneading
Knead the dough lightly. Over-kneading can also result in tough scones. Aim for just enough to bring the dough together.
Shaping
Form the dough into a uniform circle for even baking. Use your hands to gently pat it into shape.
Baking Sheet
Ensure the baking sheet is well-coated with cooking spray to prevent sticking. Alternatively, use parchment paper for easier cleanup.
Brushing
Brush the scones with milk before baking to help them achieve a nice golden color. Sprinkle with sugar for added sweetness and crunch.
Baking
Check the scones at 12 minutes to avoid over-baking. They should be golden brown and a toothpick inserted in the center should come out clean.
Serving
Serve the scones warm with a bit of butter or a dollop of clotted cream for a delicious treat.
Storage
Store any leftover scones in an airtight container at room temperature for up to 2 days. Reheat in the oven to refresh their texture.
