Preparing the Pork
Ensure the pork tenderloin strips are cut evenly into 1/2-inch pieces for uniform cooking. Toss the pork well in 1 tablespoon of cornstarch to create a light coating that helps in browning and adds a slight crispiness.
Making the Sauce
In a small bowl, combine the remaining 1 tablespoon of cornstarch, water, rice vinegar, sugar, ketchup, and soy sauce. Stir well until the cornstarch is fully dissolved. This mixture will create a tangy and slightly sweet sauce.
Stir-Frying the Pork
Heat a nonstick wok or a large, deep skillet over medium-high heat until a drop of water sizzles when it hits the surface. Swirl in the canola oil to coat the pan evenly. Add the pork and stir-fry for about 2-3 minutes until it is almost cooked through. Stir-frying at high heat helps to quickly cook the pork while keeping it tender.
Adding Aromatics
Add the minced ginger and garlic to the wok or skillet and stir-fry for about 30 seconds until fragrant. Be careful not to burn the garlic, as it can turn bitter quickly.
Adding Vegetables and Pineapple
Add the green bell pepper pieces and pineapple chunks (drained) to the wok or skillet. Stir-fry for about 3 minutes until the bell pepper is crisp-tender. The pineapple will add a sweet and tangy flavor to the dish.
Combining Everything
Pour the vinegar mixture into the wok or skillet and stir constantly until the sauce boils and thickens, and the pork is cooked through, about 1-2 minutes. The sauce should become glossy and coat the pork and vegetables nicely.

- 1 pound pork tenderloin cut into 1/2 inch strips
- 2 tablespoon cornstarch
- ⅓ cup water
- ¼ cup rice vinegar
- ¼ cup sugar
- 3 tablespoon ketchup
- 2 tablespoon reduced sodium soy sauce
- 1 tablespoon canola oil
- 1 tablespoon ginger peeled and minced
- 2 cloves garlic minced
- 1 green bell pepper seeded and cut into 1/2-inch pieces
- 8 ounces canned pineapple chunks in juice
Instructions
- In a medium bowl, combine the pork with 1 tablespoon of cornstarch.
- Toss the pork well to coat it and then set it aside.
- In a small bowl, combine the remaining 1 tablespoon of cornstarch, water, vinegar, sugar, ketchup, and soy sauce. Set aside for later.

- Add the bell pepper and pineapple to the wok or skillet and stir-fry it for about 3 minutes, or until it's crisp-tender.
- Add the vinegar mixture to the wok or skillet and cook, stirring constantly, until the mixture boils and thickens and the pork is cooked just through, for about 1-2 minutes.
