Weight Watchers Zucchini Corn Fritters
Ingredients
- 1 tbsp baking powder
- 2 cups all-purpose flour
- ½ cup sugar
- ½ tsp salt
- ½ tsp cumin
- fresh ground black pepper to taste
- 2 eggs beaten
- ¼ cup butter melted
- 1 cup milk
- 1½ cups fresh corn kernels cut from cob
- 1 cup cheddar cheese finely shredded
- 2 cups zucchini grated
- oil for frying
Instructions
- Using a large mixing bowl, add baking powder, flour, sugar, salt, cumin, and pepper. Stir to mix.
- Using a small mixing bowl, add eggs. Whisk in butter and milk.
- Add wet ingredients to the dry ingredients by slowly whisking in.
- Add in the corn, cheese, and zucchini. Stir to mix well.
- Add oil to cast iron skillet, and heat over medium/high heat.
- Drop mix in hot skillet by tablespoonfuls. Fry until fritters are browned and crisped, carefully turn using tongs and brown the other side.
- Carefully remove from the skillet and transfer to a paper towel to drain oil.
- Serve
