Weight Watchers Berry Cheesecake Pie
Ingredients
- 6 ounce frozen pie crust
- 1 cup part-skim ricotta cheese
- 1 large egg
- 1 large egg white
- 4 tbsp sugar
- ¼ tsp ground nutmeg
- 1 tsp vanilla extract
- 1 cup fresh blueberries washed and picked over
- 1 cup fresh raspberries washed and picked over
Instructions
- Preheat your oven to 350ºF.
- Place the ricotta cheese in your food processor.
- Process the cheese until it becomes smooth.
- In the food processor, add the egg, egg white, sugar, nutmeg, and vanilla .
- Process the mixture again until all the ingredients are well combined.
- Transfer the mixture into the frozen pie crust using a spoon.
- Bake the pie in the preheated oven. Check it by inserting a knife in the center. If it comes out clean, it's done. This should take about 45 to 50 minutes.
- Let cool completely
- Garnish by placing berries on top of the pie.
- Cut the pie into 8 equal sized pieces.
