- 3 cups frozen chopped broccoli
- 1 can cannellini beans rinsed and drained
- ½ teaspoon garlic powder
- ¼ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- 1 large egg lightly beaten
- ½ cup grated parmesan cheese
Instructions
- Preheat oven to 425°F
- Cover a large sheet pan with parchment paper.
- Put the broccoli in a bowl that can go in the microwave. Cover it up and microwave it on High for about 5 minutes until it becomes tender.
- Carefully remove the cover and pour out any extra liquid from the bowl.
- In a large bowl, use a fork to mash the beans until they become almost smooth.
- Add garlic powder, salt, pepper, and an egg to the bowl with the beans. Mix it all together.
- Put the broccoli in the bowl and use the fork to lightly mash it with the other ingredients. Add cheese and stir everything together.
- Divide the mixture in the bowl into 8 equal parts. Shape each part into a patty that's about ½ inch thick.
- Place the patties onto the sheet pan you prepared earlier. Spray the tops of the patties with cooking spray.
- Put the pan with the patties in the oven and bake at 425°F for around 20 minutes until they turn golden brown and set.
- Once they're ready, take them out of the oven. Serve the patties warm.
