- ¼ cup canola oil
- ¼ cup dark molasses
- 1 large egg
- 2 teaspoon fresh ginger root peeled and grated
- 1 cup sugar
- 3 tablespoon sugar for topping
Instructions
- Adjust the oven racks to the upper and lower thirds and heat your oven to 350°F. Line two large baking sheets with parchment paper.
- In a medium bowl, mix the pastry flour, baking soda, cinnamon, and ground ginger with a whisk.
- In a larger bowl, whisk the oil, molasses, egg, and fresh ginger until it's smooth. Then, mix in 1 cup of sugar.
- Add the flour mixture to the large bowl and stir everything together. Let this dough sit for about 10 minutes.
- Pour the remaining 3 tablespoons of sugar onto a small plate. Make 36 small dough balls, about 1 inch each.
