Weight Watchers Classic Ginger Cookies
Equipment
Ingredients
- 2 cups whole wheat pastry flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- ¼ cup canola oil
- ¼ cup dark molasses
- 1 large egg
- 2 teaspoon fresh ginger root peeled and grated
- 1 cup sugar
- 3 tablespoon sugar for topping
Instructions
- Adjust the oven racks to the upper and lower thirds and heat your oven to 350°F. Line two large baking sheets with parchment paper.
- In a medium bowl, mix the pastry flour, baking soda, cinnamon, and ground ginger with a whisk.
- In a larger bowl, whisk the oil, molasses, egg, and fresh ginger until it's smooth. Then, mix in 1 cup of sugar.
- Add the flour mixture to the large bowl and stir everything together. Let this dough sit for about 10 minutes.
- Pour the remaining 3 tablespoons of sugar onto a small plate. Make 36 small dough balls, about 1 inch each.
- Dip the top of each dough ball in the sugar and place them on your baking sheets. Make sure they are about 2 inches apart, sugar side up.
- Bake the cookies for 10 to 12 minutes. They should be cracked on top, soft in the middle, and firm around the edges.
- After taking them out of the oven, let them cool on the baking sheets for 2 minutes.
- Use a spatula to move the cookies onto racks and let them cool down completely.
- Once cool, store your cookies in an airtight container.
