  • Adjust the oven racks to the upper and lower thirds and heat your oven to 350°F. Line two large baking sheets with parchment paper.
  • In a medium bowl, mix the pastry flour, baking soda, cinnamon, and ground ginger with a whisk.
  • In a larger bowl, whisk the oil, molasses, egg, and fresh ginger until it's smooth. Then, mix in 1 cup of sugar.
  • Add the flour mixture to the large bowl and stir everything together. Let this dough sit for about 10 minutes.
  • Pour the remaining 3 tablespoons of sugar onto a small plate. Make 36 small dough balls, about 1 inch each.
  • Dip the top of each dough ball in the sugar and place them on your baking sheets. Make sure they are about 2 inches apart, sugar side up.
  • Bake the cookies for 10 to 12 minutes. They should be cracked on top, soft in the middle, and firm around the edges.
  • After taking them out of the oven, let them cool on the baking sheets for 2 minutes.
  • Use a spatula to move the cookies onto racks and let them cool down completely.
  • Once cool, store your cookies in an airtight container.
