  • In a medium pot, combine the cleaned lentils, stock, potatoes, onions, and paprika.
  • Heat the pot until the contents start boiling, then lower the heat to a simmer.
  • Cover the pot with a lid, leaving it slightly open to let some steam escape. Cook for 40-45 minutes until the lentils are soft.
  • Season the soup with salt and pepper according to your taste.
  • Transfer all but 1 cup of the soup into a blender or food processor and blend for a short time.
  • Pour the blended soup back into the pot, adding the reserved cup of soup. Heat everything together before serving.
