Tips and Tricks
Lime Juice
Use fresh lime juice for the marinade. Fresh juice has a brighter, more vibrant flavor compared to bottled juice.
Garlic
Smash the garlic cloves before blending. This helps release more flavor into the marinade.
Jalapenos
Remove the seeds from the jalapenos if you prefer a milder marinade. Keep the seeds for more heat.
Black Pepper
Crush the black peppercorns coarsely for a stronger, more pronounced flavor in the marinade.
Salt
Use kosher or sea salt for the marinade. These salts have a cleaner taste and better texture than table salt.
Oregano
Rub the dried oregano between your hands before adding it to the blender. This helps release its natural oils and enhances the flavor.
Marinating Time
Marinate the steak for at least 8 hours, but if you have time, let it sit for up to 24 hours. The longer marinating time will enhance the flavors and tenderize the meat further.
Grill Preparation
Preheat the grill for at least 10 minutes before placing the steak on it. This ensures a good sear and prevents sticking.
Doneness
Use a meat thermometer to check the steak’s internal temperature. For medium-rare, aim for 130°F to 135°F; for medium, 140°F to 145°F.
Resting
Let the steak rest for about 5 minutes after grilling before slicing. This allows the juices to redistribute throughout the meat, making it more tender and flavorful.
Serving
Slice the steak against the grain. This makes the meat more tender and easier to chew.
Storage
Store any leftover steak in an airtight container in the fridge. Reheat gently to avoid overcooking and drying out the meat.
