  • Place the oven rack in the center position and heat the oven to 350°F.
  • Crumble the sausage meat into a large saucepan. Cook it over medium heat until browned, stirring frequently, for about 4 minutes.
  • Remove any excess fat from the saucepan.
  • Add the onion and bell pepper to the sausage. Cook this mix for about 3 minutes, stirring frequently, until they soften.
  • Add the tomatoes, peas, tomato paste, oregano, basil, thyme, fennel seeds, salt, and pepper to the saucepan. Stir everything together.
  • Let the mixture simmer, then lower the heat. Leave it to cook without a cover for 5 minutes, stirring now and then.
  • Stir the cooked pasta and half of the cheese into the saucepan.
  • Evenly spread this mixture into a 9- X 13-inch baking pan.
  • Sprinkle the rest of the cheese over the top.
  • Bake in the oven for about 20 minutes. You'll know it's done when the cheese melts and the casserole bubbles.
  • After baking, let it cool at room temperature for 10 minutes.
  • Slice into 8 equal sized pieces and serve.
