- 1 tablespoon olive oil
- ¾ cup onion finely chopped
- ¼ cup red bell pepper finely chopped
- 2 cloves garlic minced
- ¼ cup reduced-fat shredded cheddar cheese
- ¼ cup Italian seasoned breadcrumbs
- 1½ teaspoon Italian seasonings
- 1 teaspoon ketchup
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- 1 large egg lightly beaten
- 1¼ pounds 99% fat-free ground turkey breast
- ½ cup ketchup
- 1 tablespoon light brown sugar
- 1 teaspoon mustard
Instructions
- Preheat your oven to 350°F.
- Spray a 8×4-inch loaf pan with cooking spray.
- Heat oil in a large nonstick skillet over medium-high heat.
- Add the onion, bell pepper, and garlic to the skillet and sauté for 3 minutes.
- Take the skillet off the heat and let the mixture cool down.
- In a large bowl, mix together the cooled onion mixture, cheese, breadcrumbs, Italian seasoning, ketchup, salt, pepper, and egg.
- Add the turkey to the bowl and stir until everything is just mixed.
- Place the turkey mixture into the sprayed loaf pan and level it out so it's flat on top.
- Bake it in the oven for 35 minutes.
- In a small bowl, stir together ketchup, sugar, and mustard.
- Spread this mixture over the meatloaf and return it to the oven. Bake until the inside temperature reaches 165°F, which should take about 10 to 15 more minutes.
- After baking, remove the meatloaf from the oven and let it cool for 10 minutes.
- Take the meatloaf out of the pan and cut it into 6 equal slices.
