  • Preheat your oven to 350°F.
  • Spray a 8×4-inch loaf pan with cooking spray.
  • Heat oil in a large nonstick skillet over medium-high heat.
  • Add the onion, bell pepper, and garlic to the skillet and sauté for 3 minutes.
  • Take the skillet off the heat and let the mixture cool down.
  • In a large bowl, mix together the cooled onion mixture, cheese, breadcrumbs, Italian seasoning, ketchup, salt, pepper, and egg.
  • Add the turkey to the bowl and stir until everything is just mixed.
  • Place the turkey mixture into the sprayed loaf pan and level it out so it's flat on top.
  • Bake it in the oven for 35 minutes.
  • In a small bowl, stir together ketchup, sugar, and mustard.
  • Spread this mixture over the meatloaf and return it to the oven. Bake until the inside temperature reaches 165°F, which should take about 10 to 15 more minutes.
  • After baking, remove the meatloaf from the oven and let it cool for 10 minutes.
  • Take the meatloaf out of the pan and cut it into 6 equal slices.
