Ingredients
 

  • 10 medium tomatillos husked, rinsed, cored, roughly chopped
  • 6 scallions ends trimmed, coarsely chopped
  • 1 jalapeno peppers diced
  • 1 clove garlic minced
  • ¼ cup fresh lime juice
  • 12 sprigs fresh cilantro tender stems included, coarsely chopped
  • 2 teaspoons kosher salt

Instructions
 

  • Start by placing tomatillos, scallions, jalapeno, garlic, cilantro, lime juice and salt into a food processor or mortar and pestle.
  • Puree the ingredients until smooth.
  • Taste the mixture and add more lime juice and salt as necessary.
  • Serve immediately for the freshest flavor.
