Mexican Weight Watchers Salsa Verde
Ingredients
- 10 medium tomatillos husked, rinsed, cored, roughly chopped
- 6 scallions ends trimmed, coarsely chopped
- 1 jalapeno peppers diced
- 1 clove garlic minced
- ¼ cup fresh lime juice
- 12 sprigs fresh cilantro tender stems included, coarsely chopped
- 2 teaspoons kosher salt
Instructions
- Start by placing tomatillos, scallions, jalapeno, garlic, cilantro, lime juice and salt into a food processor or mortar and pestle.
- Puree the ingredients until smooth.
- Taste the mixture and add more lime juice and salt as necessary.
- Serve immediately for the freshest flavor.
