Ingredients
- ½ cup low sodium vegetable broth
- ½ cup 1% low-fat milk
- 1 tablespoon all-purpose flour
- ⅛ teaspoon kosher salt
- pinch cayenne pepper
- 1 cup roasted broccoli
- 1 tablespoon chopped scallions
- ¼ cup reduced-fat shredded cheddar cheese
Instructions
- In a small saucepan, put together the broth, milk, flour, salt, and a pinch of cayenne pepper.
- Cook this mixture on medium-high heat until it becomes thick and starts bubbling, which should take about 4 minutes.
- Add the broccoli and scallions into the saucepan and cook for an extra minute.
- After that, take the saucepan off the heat, and mix in the cheddar cheese.
