WW Friendly Vegetable Barley Soup
Ingredients
- 1 cup barley
- 2 tablespoon olive oil
- 2 onions chopped
- 2 cups sliced mushrooms
- 2 carrots chopped
- 2 ribs celery sliced
- 3 cloves garlic minced
- 1 tablespoon fresh oregano chopped
- 4 cups vegetable broth
- 3 tablespoon tomato paste
Instructions
- Place 2 cups of water in a saucepan and bring it to a boil.
- Add barley to the boiling water, then reduce the heat to low and cover the saucepan. Let it simmer for 10 minutes until the barley becomes tender. After that, set it aside.
- In a large pot, heat some oil over medium-high heat.
- Stir in the onions, mushrooms, carrots, celery, garlic, and oregano into the pot.
- Cook these ingredients while stirring occasionally for about 5 minutes until the vegetables become tender.
- Add the cooked barley to the pot and continue cooking until everything is heated through.
