Tips and Tricks

Cooking Barley

Rinse the barley under cold water before cooking. This helps remove any excess starch and prevents it from becoming too sticky.

Sautéing Vegetables

Ensure the vegetables are cut uniformly. This ensures even cooking and a consistent texture throughout the dish.

Layering Flavors

Add the garlic and oregano last when sautéing the vegetables. This prevents the garlic from burning and ensures the herbs retain their fresh flavor.

Using Vegetable Broth

Use low-sodium vegetable broth to control the saltiness of the dish. You can always add more salt later if needed.

Adding Tomato Paste

Cook the tomato paste with the vegetables for a couple of minutes before adding the broth. This helps to caramelize the paste and deepen the flavor of the soup.

Simmering for Flavor

Allow the soup to simmer for at least 10-15 minutes after adding the broth and tomato paste. This helps meld all the flavors together and ensures the barley absorbs the broth’s flavor.

Serving Suggestions

Serve the soup with a side of crusty bread or a light salad. The bread is perfect for dipping and adds a nice texture contrast.

Storing Leftovers

Store any leftovers in an airtight container in the refrigerator for up to 3 days. The soup can also be frozen for up to a month. Reheat gently on the stovetop, adding a splash of broth if needed to adjust the consistency.
