Ingredients
 

  • 1 cup fresh corn
  • ½ cup black beans drained and rinsed
  • 16 grape tomatoes finely chopped
  • 2 scallions  thinly sliced
  • 4 tablespoon fresh cilantro chopped
  • 4 teaspoon fresh lime juice
  • ½ teaspoon lime zest grated
  • hot pepper sauce to taste
  • salt to taste
  • 12 sweet mini baby bell pepper halved, seeded

Instructions
 

  • In a large mixing bowl, add fresh corn, black beans, grape tomatoes, scallions, fresh cilantro, fresh lime juice, lime zest, hot pepper sauce, and salt.
  • Using a wooden spoon, stir to combine well.

To Serve:

  • Spoon salsa into halved bell peppers.
