Ingredients
- 1 cup fresh corn
- ½ cup black beans drained and rinsed
- 16 grape tomatoes finely chopped
- 2 scallions thinly sliced
- 4 tablespoon fresh cilantro chopped
- 4 teaspoon fresh lime juice
- ½ teaspoon lime zest grated
- hot pepper sauce to taste
- salt to taste
- 12 sweet mini baby bell pepper halved, seeded
Instructions
- In a large mixing bowl, add fresh corn, black beans, grape tomatoes, scallions, fresh cilantro, fresh lime juice, lime zest, hot pepper sauce, and salt.
- Using a wooden spoon, stir to combine well.
To Serve:
- Spoon salsa into halved bell peppers.
