Ingredients
 

  • 2 plum tomatoes chopped
  • 1 ripe avocado peeled, pitted and chopped
  • ¼ cup red onion chopped
  • 1 clove garlic minced
  • 1 tablespoon fresh oregano chopped
  • 1 tablespoon fresh parsley snipped
  • 1 tablespoon olive oil
  • 1 tablespoon red or white vinegar
  • 4 oz feta cheese crumbled

Instructions
 

  • In a mixing bowl, add tomatoes, avocado, onion, and garlic
  • Stir gently to mix.
  • Gently stir in oregano and parsley.
  • Add olive oil and vinegar. Stir gently to mix.
  • Add feta cheese and stir gently to mix.
  • Cover and place in the refrigerator for a minimum of 2 hours.
