Weight Watchers Angel Food Cake

- 1¾ cup sugar
- 1¼ cup cake flour
- ¼ tsp salt
- 1½ cups egg whites
- 1 tsp cream of tartar
- ½ tsp vanilla extract
- ½ tsp almond extract
Instructions
- Note: Do not preheat oven
- Using a sifter, and a medium sized mixing bowl, sift together sugar, flour, and salt. Repeat 4 times, then set aside for later.
- Using a stand mixer, or a hand mixer and a mixing bowl, use the whisk attachment, add egg whites. Beat until stiff peaks form, approximately 5 minutes.
- Add cream of tarter, vanilla extract, and almond extract, and beat until just combined.
- A little at a time, fold the flour mixture into the egg mixture.
- In an ungreased 10 inch angel food cake pan (tube pan), add the batter.
- Place the angel food cake pan in the cold oven.
- Set oven to 325° F
- Bake for approximately 1 hour, or until the cake becomes golden brown.
- Invert cake pan (Turn it upside down, resting on the built in feet of the pan) to cool. When the cake as completely cooled, take it out of the pan.
