Weight Watchers Sirloin Beef and Bean Chili
Equipment
Ingredients
- 1 lb lean trimmed sirloin beef
- 2 tsp olive oil
- 2 ribs celery diced
- 1 medium onion diced
- 2 cloves garlic minced
- 1 small jalapeno pepper seeded and minced
- 2 tbsp chili powder
- 2 tsp ground cumin
- ½ tsp dried oregano
- 2 bay leaves
- ½ tsp red pepper flakes or more to taste
- ½ tsp salt
- 1 cup beef broth reduced-sodium
- 1 can (8oz) tomato sauce
- 1 can (30oz) kidney beans rinsed and drained
- 1 can (28oz) crushed tomatoes
- ½ cup shallots chopped
Instructions
- Prepare a large stockpot by spraying with non-stick cooking spray.
- Place prepared stockpot over medium/high heat.
- In the stockpot, add sirloin beef and cook and break up for approx. minutes, or until meat is browned.
- Take cooked sirloin out of stockpot and transfer to a plate to save for later.
- In the same stockpot, add olive oil, and heat over medium/high heat.
- When hot, add celery, onion, jalapenos, and garlic. Saute approximately 4 minutes, or until tender.
- Return cooked sirloin to the stockpot, and add cumin, chili powder, bay leaves, oregano, red pepper flakes, and salt.
- Stir to mix in the spices well.
- Add beef broth, tomato sauce, tomatoes, and kidney beans. Stir to mix well.
- Bring to a boil, reduce heat, cover but leave a vent, and simmer for 30 minutes.
- Remove and discard bay leaves.
- To serve, top with shallots
