  • 3 ounces smoked salmon
  • 2 tablespoon  soft cream cheese
  • 1 whole-wheat English muffins split
  • 2 teaspoon capers, in brine
  • fresh arugula as needed

Instructions
 

  • Place the muffin in a toaster and toast it until it turns golden brown.
  • Spread cream cheese on both of the muffin halves.
  • Place smoked salmon on top of the cream cheese on one side of the muffin.
  • Sprinkle capers evenly over the salmon.
  • Add a handful of fresh arugula on top of the capers.
  • Take the other half of the muffin and gently press it down on the toppings to create a sandwich.
