Ingredients
 

  • ¼ cup fresh parsley minced fine
  • 1 clove garlic minced fine
  • 1 teaspoon olive oil
  • ½ teaspoon sea salt
  • 12 Cremini mushroom wiped clean, stems trimmed
  • 12 cherry tomatoes
  • 2 medium red bell peppers cut into 8 chunks each
  • onion (optional) to taste

Instructions
 

  • Preheat grill to high heat.
  • In a medium sized bowl, add parsley, garlic, olive oil, and sea salt.
  • In the bowl, add Cremini mushroom, cherry tomatoes, and red bell peppers. Toss to coat well.
  • Using 4 skewers, thread the prepared vegetables on the skewers.
  • On preheated grill, place the skewers and grill approximate 7 to 10 minutes, or until vegetables are charred and tender, turning the skewers over once during cooking.
