A delicious, hearty soup made with boneless, skinless, chicken breast, diced tomatoes, whole kernel corn, enchilada sauce, chicken broth, diced green chiles, onion, fresh cilantro, bay leaves, garlic, chili powder, ground cumin, salt, and pepper.

  • Rinse chicken breasts and pat dry with paper towels.
  • Place chicken breasts in a slow cooker.
  • Add all ingredients in the slow cooker.
  • Set slow cooker to LOW heat, cover, and cook 6 hours.
  • Remove chicken, and shred with meat claws, or two forks.
  • Place chicken back into the slow cooker, and cook another hour.
  • Serve
