I am going to be honest with you – I love Mexican food. However, I am not always feeling like having a full-blown meal that includes rice and beans. That is why this I love this soup. It has all the flavors of a typical dish without all of the calories associated with it so I can enjoy my favorite foods guilt free!
A delicious, hearty soup made with boneless, skinless, chicken breast, diced tomatoes, whole kernel corn, enchilada sauce, chicken broth, diced green chiles, onion, fresh cilantro, bay leaves, garlic, chili powder, ground cumin, salt, and pepper.
This easy recipe is made in the Slow Cooker so you don’t have to make a mess in the kitchen to prepare it.
This recipe makes six servings so if you have a small family, you can enjoy some leftovers for lunch, or another dinner!

Weight Watchers Chicken Enchilada Soup
- 1 lbs skinless, boneless chicken breast halves
- 1 can (14.5oz) diced tomatoes including juice
- 1 can (15.25oz) whole kernel corn drained
- 1 can (10oz) enchilada sauce
- 1 can (14.5oz) chicken broth
- 1 can (4oz) diced green chiles
- 1 white onion chopped
- ¼ cup fresh cilantro chopped
- 2 bay leaves
- 3 cloves garlic minced
- 1 tsp chili powder
- 1 tsp ground cumin
- 1 tsp salt
- ¼ tsp ground black pepper or to taste
- Rinse chicken breasts and pat dry with paper towels.
- Place chicken breasts in a slow cooker.
- Add all ingredients in the slow cooker.
- Set slow cooker to LOW heat, cover, and cook 6 hours.
- Remove chicken, and shred with meat claws, or two forks.
- Place chicken back into the slow cooker, and cook another hour.
