Weight Watchers Chicken Enchilada Soup
Ingredients
- 1 lbs skinless, boneless chicken breast halves
- 1 can (14.5oz) diced tomatoes including juice
- 1 can (15.25oz) whole kernel corn drained
- 1 can (10oz) enchilada sauce
- 1 can (14.5oz) chicken broth
- 1 can (4oz) diced green chiles
- 1 white onion chopped
- ¼ cup fresh cilantro chopped
- 2 bay leaves
- 3 cloves garlic minced
- 1 tsp chili powder
- 1 tsp ground cumin
- 1 tsp salt
- ¼ tsp ground black pepper or to taste
Instructions
- Rinse chicken breasts and pat dry with paper towels.
- Place chicken breasts in a slow cooker.
- Add all ingredients in the slow cooker.
- Set slow cooker to LOW heat, cover, and cook 6 hours.
- Remove chicken, and shred with meat claws, or two forks.
- Place chicken back into the slow cooker, and cook another hour.
- Serve
