They are made with frozen spinach, ricotta cheese, sour cream, cheddar cheese, parmesan cheese, eggs ,milk, parsley, hot pepper sauce, cumin, lemon pepper, pepper, and salsa.

  • Preheat oven to 375° F.
  • Prepare a muffin tin by coating with non-stick cooking spray.
  • In a medium sized mixing bowl, add spinach, ricotta cheese, sour cream, shredded cheddar cheese, and grated parmesan cheese. Stir to mix well.
  • In a small sized mixing bowl, add eggs, milk, dried parsley, hot pepper sauce, cumin, lemon pepper, and black pepper. Stir to mix well.
  • Add the mixture in the small bowl, into the mixture in the medium bowl. Stir to mix well.
  • In prepared muffin tin, spoon mixture in 12 muffin cups in equal amounts.
  • In preheated oven, bake approximately 20 – 25 minutes, or until fully set.
  • Remove from oven and let rest in muffin tin for 5 minutes.
  • Serve with salsa.
