- nonstick cooking spray
- 6 ounces frozen chopped spinach thawed and drained
- 1 cup ricotta cheese
- 2 tablespoon sour cream
- ½ cup shredded cheddar cheese
- ½ cup grated parmesan cheese
- 4 eggs
- ¼ cup milk
- 2 tablespoon dried parsley
- ¼ teaspoon hot pepper sauce
- 1 teaspoon cumin
- ½ teaspoon lemon pepper
- ¼ teaspoon ground black pepper
- 3 tablespoon salsa
Instructions
- Preheat oven to 375° F.
- Prepare a muffin tin by coating with non-stick cooking spray.
- In a medium sized mixing bowl, add spinach, ricotta cheese, sour cream, shredded cheddar cheese, and grated parmesan cheese. Stir to mix well.
- In a small sized mixing bowl, add eggs, milk, dried parsley, hot pepper sauce, cumin, lemon pepper, and black pepper. Stir to mix well.
- Add the mixture in the small bowl, into the mixture in the medium bowl. Stir to mix well.
- In prepared muffin tin, spoon mixture in 12 muffin cups in equal amounts.
- In preheated oven, bake approximately 20 – 25 minutes, or until fully set.
- Remove from oven and let rest in muffin tin for 5 minutes.
- Serve with salsa.
