- 1 large eggplant
- 2 large eggs
- 2 tablespoon tomato paste
- 2 tablespoon water
- 1 cup Italian seasoned whole wheat breadcrumbs
- ¼ cup grated Parmigiano-Reggiano cheese
- cooking spray as needed
Instructions
- Preheat oven to 400°F
- Place parchment paper on a large baking sheet with edges.
- Peel the eggplant and cut off a small piece from the rounded sides so it sits flat.
- Slice the eggplant lengthwise into ½-inch thick pieces.
- Cut each slice into ½-inch thick sticks, then cut these sticks in half. You should end up with about 48 pieces.
- In a shallow bowl, mix egg whites, tomato paste, and water with a whisk.
- In a different shallow bowl, mix breadcrumbs and cheese together.
- Dip each eggplant stick into the egg white mixture, making sure it's fully coated. Shake off any extra liquid.
- Roll the coated eggplant stick in the breadcrumb mixture until it's fully covered.
- Place the coated stick on the baking sheet. Make sure they don't touch or overlap.
- Spray the eggplant fries with cooking spray.
- Bake them in the oven for about 25 minutes, until they turn brown and crunchy.
- After baking, put the baking sheet on a wire rack and let the fries cool for a few minutes.
