Instructions

  • Preheat oven to 400°F
  • Place parchment paper on a large baking sheet with edges.
  • Peel the eggplant and cut off a small piece from the rounded sides so it sits flat.
  • Slice the eggplant lengthwise into ½-inch thick pieces.
  • Cut each slice into ½-inch thick sticks, then cut these sticks in half. You should end up with about 48 pieces.
  • In a shallow bowl, mix egg whites, tomato paste, and water with a whisk.
  • In a different shallow bowl, mix breadcrumbs and cheese together.
  • Dip each eggplant stick into the egg white mixture, making sure it's fully coated. Shake off any extra liquid.
  • Roll the coated eggplant stick in the breadcrumb mixture until it's fully covered.
  • Place the coated stick on the baking sheet. Make sure they don't touch or overlap.
  • Spray the eggplant fries with cooking spray.
  • Bake them in the oven for about 25 minutes, until they turn brown and crunchy.
  • After baking, put the baking sheet on a wire rack and let the fries cool for a few minutes.
