  • In a medium sized mixing bowl, sift together whole wheat flour and baking powder. Set aside for later.
  • In a large mixing bowl, add milk, egg, artificial sweetener, and salt. Beat to mix well.
  • Add flour, and stir to mix until just combined.
  • Fold in blueberries.
  • Place a heavy skillet over medium heat.
  • Spray skillet with non-stick cooking spray.
  • Measure ¼ cup of batter, and pour in the skillet. Make another pancake if it will fit in the skillet.
  • Cook pancake until bubbles start to form, approximately 1½ – 2 minutes.
  • Using a spatula, flip pancake and cook the other side until golden brown. Repeat for the rest of the pancakes.
