Weight Watchers Whole Wheat Blueberry Pancakes
Ingredients
- 1¼ cups whole wheat flour
- 2 tsp baking powder
- 1 cup milk or as needed
- 1 egg
- 1 tbsp artificial sweetener
- ½ tsp salt
- ½ cup blueberries
Instructions
- In a medium sized mixing bowl, sift together whole wheat flour and baking powder. Set aside for later.
- In a large mixing bowl, add milk, egg, artificial sweetener, and salt. Beat to mix well.
- Add flour, and stir to mix until just combined.
- Fold in blueberries.
- Place a heavy skillet over medium heat.
- Spray skillet with non-stick cooking spray.
- Measure ¼ cup of batter, and pour in the skillet. Make another pancake if it will fit in the skillet.
- Cook pancake until bubbles start to form, approximately 1½ – 2 minutes.
- Using a spatula, flip pancake and cook the other side until golden brown. Repeat for the rest of the pancakes.
