  • Place wooden spoons on both of the long sides of the potato. This will prevent you cutting all the way through the potato.
  • Using a sharp knife, begin on one end of the potato approximately ⅛ inch from the end, make a slice through the potato, stopping when you hit the wooden spoons.
  • Continue slicing the potato approximately every ⅛ of an inch, the whole length of the potato.
  • Carefully, spread the slices a bit to fan out the slices.
  • Spray the potatoes with non-stick cooking spray.
  • Preheat the air fryer to 350° F
  • Place potatoes in Air Fryer.
  • Air Fry potatoes for 20 minutes.
  • Spray the potatoes with non-stick cooking spray again.
  • Season potatoes with ¼ teaspoon of salt.
  • Air Fry potatoes again for approximately 15 – 20 minutes, or until they are crispy on the outside, and tender on the inside.
  • In the meantime, in a small mixing bowl, add fat-free plain Greek yogurt, water, light Mayonnaise, dill, parsley, garlic, salt, and pepper. Stir to mix well.
  • To serve, drizzle approximately 1½ tablespoons of yogurt mix over each potato.

Notes

Don’t cut the potatoes all the way through to the bottom.
Serving size: 1 potato and approximately 1½ tablespoons of  sauce
