What is Ropa Vieja

Ropa Vieja is a Cuban shredded beef dish. The name literally means “old clothes” in Spanish, and is said to have originated because the dish was so often made with leftover meat.

  • In a slow cooker, add chicken broth, apple cider vinegar, ground cumin, salt, pepper, and cayenne pepper. Using a whisk, whisk to mix well.
  • In the slow cooker, add approximately ⅓ of the sweet red pepper, red onion, fresh apples, celery, and garlic, reserving the rest to place around and on top of the flank steak.
  • Add flank steak.
  • Add the rest of the vegetables around and on top of the flank steak.
  • Place lid on slow cooker, and set to LOW heat setting.
  • Cook approximately 8 hours, or until flank steak will easily shred with a fork.
  • Remove flack steak from the slow cooker to a cutting board, and let rest for 10 minutes.
  • Using shredding claws, or 2 forks, shred the flank steak.
  • Place shredded flank steak back into the slow cooker.
  • Add cilantro, and stir to mix well.
  • Serve immediately, or turn the slow cooker temperature down to warm for up to 4 hours.
