Weight Watchers Ropa Vieja (Slow Cooker)
Ingredients
- 1½ cups fat-free low-sodium chicken broth
- ¼ cup apple cider vinegar
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper freshly ground
- ¼ teaspoon cayenne pepper or to taste
- 3 pounds lean flank steak trimmed of any fat
- 2 large sweet red pepper seeded, cored and chopped
- 2 medium red onion thinly sliced into rings
- 2 medium fresh apples peeled, cored and shredded
- 3 ribs celery thinly sliced
- 3 cloves garlic minced
- ½ cup fresh cilantro packed, chopped
Instructions
- In a slow cooker, add chicken broth, apple cider vinegar, ground cumin, salt, pepper, and cayenne pepper. Using a whisk, whisk to mix well.
- In the slow cooker, add approximately ⅓ of the sweet red pepper, red onion, fresh apples, celery, and garlic, reserving the rest to place around and on top of the flank steak.
- Add flank steak.
- Add the rest of the vegetables around and on top of the flank steak.
- Place lid on slow cooker, and set to LOW heat setting.
- Cook approximately 8 hours, or until flank steak will easily shred with a fork.
- Remove flack steak from the slow cooker to a cutting board, and let rest for 10 minutes.
- Using shredding claws, or 2 forks, shred the flank steak.
- Place shredded flank steak back into the slow cooker.
- Add cilantro, and stir to mix well.
- Serve immediately, or turn the slow cooker temperature down to warm for up to 4 hours.
